
My fiancé makes the most amazing eggs benedict, that I (and most of our friends and family) have ever laid eyes on. There are no shortcuts with this one, just lots of homemade love. But how could you complain when the outcome is this good?! Even Finn (our little cat) wants a taste. Mind you, that was as close as she got. I thought it would be mean to show you such delicious photos without the recipe, so read on to give it a whirl. Enjoy x
Ingredients (Recipe makes 2)
7 eggs
spinach and/or rocket
75g butter
Turkish bread
Slice of lemon
Slice of lime
Sliver of smoked salmon/ham
Method
Hollandaise sauce
Crack three eggs, disposing of the whites and putting the yolks in a pot.
Whisk egg yolks on a low heat until thickened and smooth.
Melt butter and set aside to cool.
Slowly add butter to yolks while whisking. Do not take off the heat.
Add squeeze of lemon and lime.
Base of meal
Fill deep pan with boiling water and crack 4 eggs into it.
Poach on high heat until cooked.
Toast turkish bread lightly.
To serve, layer salmon/ham, spinach, and eggs. Drizzle with hollandaise
